Chicken Caesar Wraps

Seared chicken, crisp romaine, and parmesan rolled up Caesar-style.

Ingredients

Chicken breast1 lb
Romaine lettuce1 head
Grated parmesan1/4 cup
Caesar dressing1/3 cup
Flour tortillas8-pack
Olive oil1 tbsp
Steps
  1. Pat the chicken dry and slice each breast horizontally into thin cutlets; season with ½ tsp salt and a few grinds of pepper.
  2. Heat the olive oil in a skillet over medium-high; sear the cutlets 4–5 minutes per side until golden and no longer pink in the center (165°F).
  3. Rest the chicken 3 minutes, then slice it against the grain into strips — resting keeps the juices in the chicken instead of in your wrap.
  4. While the chicken rests, chop the romaine into bite-size pieces and dry it well; toss with the Caesar dressing and parmesan.
  5. Warm the tortillas 15–20 seconds per side in the empty skillet so they roll without cracking.
  6. Lay chicken and salad down the center of each tortilla, fold in the sides, roll tight, and slice in half.
