Edamame Veggie Fried Rice

Fast vegetable fried rice with edamame, carrots, peas, and sesame.
Ingredients
Edamame12 oz shelled
Frozen peas1 cup
Carrots2
Green onions1 bunch
Garlic3 cloves
White rice1 cup
Soy sauce3 tbsp
Sesame oil1 tbsp
Sesame seeds1 tbsp
Vegetable oil1 tbsp
Steps
- If cooking rice fresh, spread it on a plate for 5 minutes after cooking so steam escapes; drier rice fries instead of turning mushy.
- Slice the green onions, dice the carrots small, mince the garlic, and keep the edamame and peas near the stove.
- Heat vegetable oil in a large skillet over medium-high. Cook the carrots for 3 minutes with a pinch of salt until starting to soften.
- Add the edamame and peas and cook 2-3 minutes until hot. Stir in the garlic for the final 30 seconds.
- Add the rice and press it into the pan for 1 minute before stirring; this gives it a little fried texture.
- Pour in soy sauce and sesame oil, then toss for 1-2 minutes until the rice is evenly seasoned and hot.
- Fold in the green onions and sesame seeds. Taste before adding salt because soy sauce brings most of what the dish needs.
