Hoisin-soy ground turkey spooned into crisp butter lettuce cups.
Ingredients
Ground turkey1 lb
Butter lettuce1 head
Yellow onion1
Green onions1 bunch
Garlic3 cloves
Water chestnuts1 can
Hoisin sauce1/4 cup
Soy sauce2 tbsp
Steps
Separate the butter lettuce into whole leaves, wash, and dry them well — dry leaves stay crisp instead of wilting. Chill until serving.
Dice the onion into ¼-inch pieces, mince the garlic, drain and chop the water chestnuts, and slice the green onions.
Brown the turkey and onion in a large skillet over medium-high, 7–8 minutes, breaking the meat into small crumbles until no pink remains; add the garlic for the last minute.
Stir in the hoisin and soy sauce and simmer 2 minutes until glossy — no extra salt needed, the sauces carry it.
Fold in the water chestnuts and most of the green onions and cook 1 minute, just to heat through while keeping the crunch.
Spoon the filling into the lettuce cups, scatter the remaining green onions on top, and serve.
