Sizzling seitan strips, peppers, onions, and rice with lime.
Ingredients
Seitan8 oz
Bell peppers3
Yellow onion1
Lime1
White rice1 cup
Taco seasoning1 packet
Vegetable oil1 tbsp
Steps
Start the rice first: rinse 1 cup rice, combine with 2 cups water and 1/2 tsp salt, bring to a boil, then cover and simmer on low for 15 minutes.
Slice the seitan into 1/2-inch strips. Slice the peppers and onion into thin strips so they cook quickly.
Toss the seitan with half the taco seasoning and 1 tsp oil. Toss the peppers and onion with the remaining seasoning.
Heat a large skillet over medium-high. Sear the seitan for 3-4 minutes, turning once, until browned at the edges; move it to a plate.
Add the peppers and onion to the same skillet and cook 6-7 minutes, stirring occasionally, until softened with a little char.
Return the seitan with 2 tbsp water and scrape up the browned bits for 1 minute so everything gets coated.
Serve over rice with lime wedges. Let the skillet sit empty for a minute before washing; the browned seasoning releases more easily.
