Shrimp Tacos

Quick seasoned shrimp in tortillas with crunchy slaw and lime crema.

Ingredients

Shrimp12 oz
Coleslaw mix1 bag
Lime1
Sour cream1 small tub
Taco seasoning1 packet
Flour tortillas8-pack
Steps
  1. Pat the shrimp very dry — dry shrimp sear instead of steaming — then toss with the taco seasoning.
  2. Stir the juice of half the lime into ½ cup sour cream with a pinch of salt; thin with a teaspoon of water until it drizzles easily.
  3. Toss the coleslaw mix with a squeeze of the remaining lime and a pinch of salt; let it sit so it softens slightly.
  4. Heat a nonstick skillet over medium-high; cook the shrimp about 2 minutes per side until pink and opaque, curled into a loose C.
  5. Warm the tortillas in the empty skillet 30 seconds per side, or wrap the stack in a damp paper towel and microwave 30 seconds.
  6. Fill each tortilla with shrimp and slaw, drizzle with the lime crema, and serve right away.
