Quick turkey meatballs simmered in marinara over spaghetti.
Ingredients
Ground turkey1 lb
Garlic2 cloves
Spaghetti8 oz
Marinara sauce1 jar
Grated parmesan1/4 cup
Steps
Bring a large pot of salted water to a boil; cook the spaghetti until al dente, about 1 minute less than the package says, and save ¼ cup pasta water before draining.
Mix the turkey with the minced garlic, ¾ tsp salt, and a few grinds of pepper; roll into about 16 small meatballs with damp hands so the mix doesn't stick.
Brown the meatballs in a nonstick skillet over medium-high, 6–7 minutes, turning to color a couple of sides — they'll finish cooking in the sauce.
Pour in the marinara, scrape up any browned bits, and simmer gently 5–6 minutes until the meatballs show no pink in the center.
Loosen the sauce with a splash of the reserved pasta water if it gets thick.
Serve the meatballs and sauce over the spaghetti with plenty of parmesan.
