Garlicky soy-honey ground turkey over rice with carrot and green onion.
Ingredients
Ground turkey1 lb
Carrots1
Green onions1 bunch
Garlic2 cloves
White rice1 cup
Soy sauce3 tbsp
Honey1 tbsp
Steps
Start the rice first — 1 cup rice, 2 cups water, and a pinch of salt, covered on low 15 minutes; the topping takes about half that long.
While the rice cooks, mince the garlic, grate the carrot, and thinly slice the green onions.
Brown the turkey in a large skillet over medium-high, 6–7 minutes, breaking it into small crumbles until no pink remains; stir in the garlic for the last minute.
Add 3 tbsp soy sauce and 1 tbsp honey; simmer 2 minutes until the liquid reduces to a glossy glaze. Skip extra salt — the soy covers it.
Taste and finish with a few grinds of pepper.
Spoon the turkey over bowls of rice and shower with the grated carrot and green onions.
