Seared shrimp with charred peppers and onion in warm tortillas.
Ingredients
Shrimp12 oz
Bell peppers3
Yellow onion1
Lime1
Taco seasoning1 packet
Vegetable oilsplash
Flour tortillas8-pack
Steps
Slice the peppers and onion into ¼-inch strips; pat the shrimp very dry so they sear instead of steam.
Toss the veg with half the oil and half the taco seasoning; toss the shrimp with the rest of both.
Heat a large skillet over high until a drop of water sizzles off instantly. Cook the veg 5–6 minutes, stirring only occasionally so it chars.
Push the veg to the edges and add the shrimp to the center; cook about 2 minutes per side until pink and opaque, curled into a loose C — shrimp go in last because they turn rubbery fast.
Squeeze the lime over everything and toss once.
Warm the tortillas in a dry skillet 30 seconds per side, then fill and serve.
