Shrimp Fajitas

20 minOne panTex-Mex

Seared shrimp with charred peppers and onion in warm tortillas.

Ingredients

Shrimp12 oz
Bell peppers3
Yellow onion1
Lime1
Taco seasoning1 packet
Vegetable oilsplash
Flour tortillas8-pack
Steps
  1. Slice the peppers and onion into ¼-inch strips; pat the shrimp very dry so they sear instead of steam.
  2. Toss the veg with half the oil and half the taco seasoning; toss the shrimp with the rest of both.
  3. Heat a large skillet over high until a drop of water sizzles off instantly. Cook the veg 5–6 minutes, stirring only occasionally so it chars.
  4. Push the veg to the edges and add the shrimp to the center; cook about 2 minutes per side until pink and opaque, curled into a loose C — shrimp go in last because they turn rubbery fast.
  5. Squeeze the lime over everything and toss once.
  6. Warm the tortillas in a dry skillet 30 seconds per side, then fill and serve.
